Cooking Class: Basic Marinara Sauce

Ingredients:

1/2   Onion
3      Cloves Garlic
3      Tbs. Olive Oil
1      Pinch Crushed Red Pepper
2      Cans Whole Plum Tomatoes, 28 oz. each, peeled
4      Leaves Fresh Basil
1      Pinch Salt, if needed

Open both cans of tomatoes.

Pour tomatoes into a large bowl.

Using hands & fingers, squeeze & crush tomatoes.

Peel and mince onion & garlic.

Place onion, garlic and oil into a pan.

Cook and stir ingredients over medium heat for about 8 minutes.

Onion needs to cook but not brown.

Add crushed red pepper during the last minute.

Add tomatoes to the pan.

Mix all ingredients together.

Bring tomatoes to a simmer.

Cover the pan and simmer for 30 minutes.

Stir the sauce from time to time.

When the sauce is just about done, tear basil in half and place into the pan.

Cover pan & cook another couple minutes.

After 30 minutes, remove the pan from the stove.

Using a large ladle, place sauce into a blender.

Puree the sauce and place back into the pan to serve; or place back into the bowl and let cool for later use.

Taste sauce and add salt if needed.

Many brands of canned tomatoes are already salted.
