Marinated Peppers
w/ basil and olives

Ingredients

2       Red Bell Peppers
2       Yellow Bell Peppers
2       Orange Bell Peppers

Marinade:
1/2    tsp. Garlic, minced
2       Tbs. Olive Oil
2       Tbs. Red Vinegar
1/4    tsp. Oregano, dry leaf
2       Tbs. Fresh Basil, sliced thin
1/2    tsp. Salt
1/8    tsp. Pepper, ground
10     Olives, your favorite kind








Prepare one recipe of roasted peppers.



Slice peppers about 1/2 inch thick.

Place sliced peppers into a mixing bowl.




Rinse, shake dry and slice the basil.

Gather and measure all marinade ingredients.

Place ingredients into the bowl.

Mix well and serve.

Can leave in the fridge for a few hours or a few days.

New Taste Thinking:

Marinated Peppers can be enjoyed year round. They make a great salad before the meal or serve as a side dish with the meal.
Peppers can also can be rolled up in a
wrap for a healthy lunch or light dinner.
