1/2 Cup Buckwheat Flour 1/4 Cup Oat Flour 1/4 Cup Flax Seed Meal 1/4 Cup Soy Flour 1/4 Cup Cornmeal, medium grind 1/4 Cup Rye Flour 2 Cups Whole Wheat Flour, regular or albino 1/2 Tbs. Baking Soda 1/2 Tbs. Baking Powder 1 tsp. Salt
Measure all ingredients.
Place ingredients into a medium mesh strainer.
Shake with one hand and rub the grains with the other to pass flour through the strainer.
When you have all of the fine flour sifted you will have some of the coarser ground grains still in the strainer.
Check these grains for any odd objects like small stones or bugs.
If everything looks good dump the remaining grains in with the sifted flour.
Mix all ingredients together one last time and place multi-grain flour into a reusable container.
Keep in cupboard until needed.

Sometimes it is better to purchase a multi-grain flour mix that is already packaged. It saves you some work and also keeps you from buying and storing small amounts of various flours and grains. On the other hand, sometimes you have most of the ingredients already and just need a couple more to fill the recipe. The good news is that if you shop in a store that has a bulk bin section you can simply buy just a couple tablespoons of any ingredients that you need.
