1 Tbs. Gara Masala Spice Mix 1 Tbs. Curry Powder, yellow 1 tsp. Granulated Garlic, dry 1/4 tsp. Ground Pepper, black 1/4 tsp. Salt
Heat Oven To 375°
Wash and dry a nice bunch of small carrots.
Trim and discard the carrot tops.
Gather the spices:
1 Tbs. Gara Masala Spice Mix 1 Tbs. Curry Powder, yellow 1 tsp. Granulated Garlic, dry 1/4 tsp. Ground Pepper, black 1/4 tsp. Salt
Wash potatoes and cut in half.
Place potatoes, carrots, spices and 2 tablespoons of oil into a mixing bowl.
Toss all ingredients together by hand.
Use your fingers to rub all of the spices into the carrots and potatoes.
Place carrots and potatoes onto a foil lined pan.
Bake in the oven for 25-30 minutes.
Carrots and potatoes are ready when they are fork tender and cooked through.
While tray is baking, start on the mustard greens.
Find a full and heavy bunch of mustard greens.
Cut the stems off just below the white band.
Cut or tear the leaves into medium size pieces.
Discard any remaining tough, thick stems.
Wash the mustard greens at least two times in plenty of cold water.
2 Tbs. Chopped Garlic 2 Tbs. Chopped Shallots 2 Tbs. Olive Oil 1 Pinch Salt & Pepper 2 Tbs. Lemon Juice 1 Cup Vegetable Stock
Place oil, garlic and shallots into a hot pan.
Cook and stir the ingredients for a minute.
Season with salt and pepper.
Add 1 Cup of Vegetable stock and lemon juice to the pan.
Add mustard greens to the pan.
Cover pan and simmer the greens for about 5 minutes.
Stir greens from time to time.
Remove cover and cook another couple of minutes.
Greens should be soft and tender.
Most of the vegetable stock will be cooked out.
Let cooked greens sit off to the side while carrots and potatoes are finishing up in the oven.
When carrots and potatoes are cooked, remove them from the oven.
Add another 1/2 cup or so of vegetable stock to the greens.
Bring to a boil and add the cooked vegetables.
Stir everything together a couple of times and pour onto a serving platter.
Garnish with a few lemon slices on the side and a tiny drizzle of oilve oil.

I can not tell you how much I love this simple combination of flavors and textures. The three main ingredients, potatoes, carrots, mustard greens, are from the local farmers market and I don't think that they cost five bucks all together.
