Orange-Hazelnut Vinaigrette

Ingredients:
1 Orange, segmented 2 Tbs. Orange Juice 2 Tbs. Hazelnuts, toasted 1 Tbs. Parsley, chopped 1 Tbs. Shallot, minced 3 Tbs. Olive Oil 2 Tbs. Red Vinegar 1 Pinch Salt & Pepper

Cut orange segments into smaller pieces; place into a bowl.

Squeeze orange for juice.
Mince shallot.
Chop parsley.
Crush hazelnuts by putting into a bag and tapping with the flat side of a large knife.

Measure and add all ingredients to the bowl.

Mix ingredients together.
Can be used immediately or kept covered in fridge for a couple of days.
