Jicama, Citrus and Papaya Salad:

Salad Ingredients:

3     Grapefruit, cut into
segments
3     Oranges, cut into segments
1    
Jicama, cut into thin slices
1/2 
 Papaya, medium dice
1/2  Red Onion, sliced thin
1     Green Pepper, medium dice
1     Tomato, medium dice
1     Cucumber, peel and slice thin

Garnish: 1 Avocado, sliced thin

Dressing Recipe Below

Citrus Dressing:

Ingredients:

4     Tbs. Olive Oil
6     Tbs. Lime Juice
1/4  tsp. Salt, maybe a pinch more
1/2  Cup Cilantro Leaves
2     Chipotle Peppers, canned

3/4  Cup Citrus Juice, squeeze from 
leftover orange and grapefruit and also
from bottom of bowl once you have all
of the salad ingredients tossed together.

Place all dressing ingredients into blender and puree.

To Serve:

Place all of the salad ingredients into a large bowl.

Pour all of the dressing over the salad and mix well.

Best if left to marinade for a couple of hours in the fridge.


Can also be served in small bowls.

Garnish with avocado slices and cilantro sprigs.
