Pepper Crusted Baked Potato
[also works with sweet potatoes]

2     Baking Potatoes
1     Tbs. Olive Oil
1/2  Tbs. Table Grind Black Pepper*
1/2   tsp. Kosher Salt

Garnish: for each potato:
1     Tbs. Green Onion, sliced thin
1      tsp. Olive Oil

* Table grind pepper is also known as coarse ground or sometimes cafe ground. It comes already ground. It is different from the fine ground pepper that you put into a pepper shaker as it is a larger grind.

Scrub potatoes and then let air dry.

Place potatoes into a large bowl.

Add oil, salt and pepper.

Toss potatoes a number of times to coat evenly.

Place potatoes on high rack of BBQ grill.

Bake at 450° for one hour, turning over at half hour.

Can also be cooked inside the oven on middle rack.

Be sure to place a pan under the potatoes.

If oil drips onto pan be sure to wipe it off before it starts smoking.

Sweet potatoes take only 40 minutes.
