Chinese Five Spice Chicken Noodle Soup


Ingredients:

5      Cloves Garlic
1      Stalk Celery
2      Ounces Ginger
1      Tbs. Lime Juice
1      Tbs. Brown Rice Vinegar, or any kind you like
2      Tbs. Soy Sauce
1      Tbs. Sesame Oil
1/2   Onion, Sliced Thin
1      Serrano or Jalapeno Pepper, or less if you want a mild soup
1/2   Tbs. Chinese Five Spice Powder
7      Cups Chicken Stock, fresh or box

1      Pound Chicken Breast
4      Ounces Shiitake Mushrooms, sliced thin
8      Ounces Pasta, I like whole wheat spaghetti
1      Cup Bean Sprouts
1/2   Cup Sliced Basil, fresh
1/2   Cup Chopped Cilantro
3      Green Onions, slice thin
1      Pinch Salt, if needed


Smash and peel the garlic.

Slice onion thin.

Cut up the celery.

Slice the ginger into round circles.

Cut serrano in half.



Place first eleven ingredients into a large pot.

Bring liquid to a boil and turn heat down to a very slow gentle simmer.

Cover pot; simmer ingredients for half an hour.



While soup is simmering you can cook the pasta.

Here is a great way to
cook pasta.

You only need half of this package for the recipe.


Trim fat and skin from the chicken breast.

Remove cover from the pot.

Add chicken breast to the soup.

Cover the pot and gently simmer the chicken for about ten minutes.

Turn the heat off and let the chicken finish cooking in the pot for another fifteen minutes.



While chicken is cooking you can rinse and slice the cilantro, basil, green onion and measure the bean sprouts.


Remove chicken and check the temperature.

Chicken should be cooked to 160°.

Let chicken cool before cutting.



Strain the soup.

Save the broth and discard the cooked ingredients.



Rinse or wipe the shiitake mushrooms clean.

Slice the mushrooms very thin.

Slice the chicken thin.

You can also dice the meat or shred it by hand.



Heat the broth to just below a simmer.

Try not to boil the broth.

Add the chicken and mushrooms to the broth.

Gently heat the chicken and mushrooms.



Add pasta to the pan.

Gently heat the noodles, stirring from time to time.



Add the chopped herbs and bean sprouts

No need to cook the herbs, just mix them in.



Taste the broth.

Broth may need a pinch of salt or maybe a bit more lime juice.

You will need kitchen tongs and a ladle to serve the soup.

You will also need a spoon and fork to eat the soup, or just chopsticks.
