Pickled Red Onions
1/2 Red Onion
1 Tbs. Red Vinegar
1 Pinch Dry Oregano
Slice half of a red onion as thin as you can.
Separate onion slices into individual pieces.
Place vinegar and oregano into a large bowl.
Bring 6 cups of water to a boil.
Place onions into a medium size strainer.
When water boils, add onions to the pot.
Immediately pick up the pot and bring it over to the sink.
Onions should sit in the water for five seconds only.
Pour the onions and water back into the strainer.
Shake water off of the onions.
Place "blanched" onions into the bowl.
Toss with vinegar-oregano marinade.
Mix every ten minutes and onions will be ready to use in about half an hour.
