Note: This is a great quick lunch. I usually have the cereal in the fridge and make the beans a couple times a month. This pairs up nicely with the Wilted Kale. Sometimes I luck out and have some Vegan Cornbread in the freezer.
If you have these ingredients already in the house and would like to make something a little special for lunch or dinner, try the next recipe. You can also garnish it with some chicken if you like.
Pinto & 4 Grain Recipe #2
Ingredients:
1 Cup New Taste Cereal 1/2 Cup Pinto Beans 1/4 Cup Orange Juice 1 tsp. Lime Juice 1 tsp. Red Vinegar 1 tsp. Dark Chile Powder 1 tsp. Olive Oil 1/2 Cup Diced Mango Pinch salt and pepper
Garnish: Watercress leaves or any greens Red Onion Cilantro Hot Peppers, optional
Place all ingredients, minus garnish, into large pan.
Mix everything together.
Heat ever so slightly until just barely warm.
Place watercress or other green on plate.
Cover with warm ingredients.
Garnish generously with cilantro, onion and peppers.
