Poached Dried Fruit

I recommend that all of the ingredients below
should be unsweetened and unsulfured.
I purchase them at Trader Joe's.


6     Ounces Dried Figs
6     Ounces Dried Mango
6     Ounces Dried Cherries
6     Ounces Dried Apricots
12   Ounces Dried Pineapple

3      Tbs. Lemon Juice
3      Cups Water

Place pineapple in refrigerator overnight.

The next day, break pineapple into small pieces.

Tear mango into small pieces.

Slice apricots and figs into medium size pieces.

Place all ingredients into a pan.

Cover pan and place on stove.

Gently cook fruit for about 10 minutes.
Be sure to stir the fruit every minute or so.

Fruit should be hot and steamy as it simmers.

Fruit will absorb most of the water.

When fruit is cooked soft remove from heat.

Leave covered another few minutes.

Remove from pan and cool.

Fruit will last all week in the fridge.

New Taste Thinking:

If you stop and think about it, jams and jellies are mostly sugar and a little bit of fruit.
A great alternative is to make a pure fruit spread to put on your peanut butter sandwich.
Simply take some of the poached fruit and puree it in the food processor. 


This poached fruit recipe is great for dessert or an anytime snack. You can cut the recipe in half if you like. I always make a full batch because after a few days, when I am down to 2 cups of fruit, I make my Jamaican Corn Pudding Dessert.
