Polenta and Eggs

Ingredients:

1/2   Cup Basic Polenta
3      Egg Whites
1      Whole Egg
1      tsp. Olive Oil

       Salt and Pepper

Place oil into egg pan.

Place eggs into pan.

Cook eggs for a while over hot heat.

Remove eggs from heat and let rest a minute.

Place back on heat and cook a bit more.

This method is used to make sure yolk is warm.

Place polenta onto plate

Slide eggs over polenta and serve.


New Taste Thinking:

Polenta and eggs are a great breakfast or lunch that will fill you up and give you energy.
Be sure to make extra polenta to serve later as Polenta with Summer Vegetables.


As far as eating eggs, particularly the yolks, if you have concerns regarding cholesterol you should talk to your doctor or dietician. Eggs have enjoyed a recent resurgence as a healthy food but I would imagine that this may not be the case for everyone.
