Maple-Mustard Pork Loin Roast w/ Caraway Crust

Ingredients:
3 Pound Pork Loin, center cut, boneless 3 Tbs. Dijon Mustard 3 Tbs. Maple Syrup 1 tsp. Thyme, dry 1 tsp. Oregano, dry 1 tsp. Rosemary, dry 2 tsp. Granulated Garlic, dry 1/2 tsp. Pepper, coarse grind
2 Tbs. Caraway Seeds

Trim all extra fat off of the pork loin.
Place the pork loin into a one gallon plastic bag.
Place all ingredients, minus caraway seeds into a small bowl.
Mix ingredients together and pour into the bag.
Massage marinade all over the pork.
Place bag in fridge for at least 6 hours or up to 24 hours.

Heat Oven To 350°
Place pork loin onto a baking sheet.
Cover the loin generously with the caraway seeds.
Place pork in oven and roast for about one hour.
The pork loin is ready when the internal temperature reaches 150° on an instant read thermometer.
Remove pork from oven and let rest for 15 minutes before carving.
