Potato Salad Dijon

Ingredients:

2   Pounds Red Potatoes.


Place potatoes into a large pot.

Fill the pot with cold water as seen in photo.

Place pot onto stove; Bring to a boil.



Boil potatoes over medium-high heat until tender.

This should take about 30 minutes, depending on size of potato.

Check potato from time to time by sticking a fork into the potato to see if it is cooked.

When potato is cooked, remove from heat and strain.

Leave potatoes to cool while preparing the rest of the ingredients.




1    Green Pepper
2    Stalks Celery
3    Green Onion



Wash and dice the vegetables.
Mustard Vinaigrette Ingredients:

2    Tbs.  Dijon Mustard
2    Tbs.  Red Vinegar
1    Tbs.  Water
1/2  tsp.  Salt
1/8  tsp.  Ground Black Pepper
1/4 Cup  Olive Oil


Place all ingredients, minus oil, into a mixing bowl.



Mix ingredients, minus oil, together.

Add a bit of oil to the bowl and whisk it into the dressing.

Add a bit more and whisk it in as well.

Continue adding all of the oil, a little at a time, until it is all incorporated into the dressing.





Add the diced vegetables to the dressing.
Cut the potatoes into medium size pieces.

It does not matter if they are still warm/hot.

Add potatoes to the vinaigrette and mix well.
