Fig, Pistachio & Orange Quinoa



Ingredients:

1      Recipe
Cooked Quinoa
1      Cup Figs, dry, any kind
2      Oranges, large, navel
3      Tbs. Parsley, flat leaf, chopped
3      Tbs. Lemon Juice
2      Tbs. Olive Oil
1/2    Cup Pistachio Nuts, shelled
1/4    tsp. Salt

 



Cook one recipe of quinoa and let cool in the pan for about half an hour.

Toss and fluff a couple of times as it cools.



Peel both oranges with a knife.

Remove the skin and white pith.

Cut oranges in half.

Cut them again into quarters.





Slice quarters into bite-size pieces.



Remove stem from top of fig.

Cut fig into thin slices.


 


Place figs and oranges into a bowl.

Let them marinate together for a while.

Dried figs will absorb some orange juice.



Rinse, shake dry and chop parsley.


Add all ingredients from this recipe to the bowl.

Mix and toss well.

Serve at room temp or cover, place into fridge and serve cold.

This recipe makes a great salad, side dish, snack or even breakfast.

New Taste Thinking:

I have absolutely nothing to do with Bob's Red Mill or Costco but must admit I was blown away to find this 4 pound bag yesterday sitting in an aisle at Costco.
The price is about half of what I have been paying.
Who would have imagined finding this product at a mainstream warehouse chain-store just a few short years ago?!!
