2 teaspoons Olive Oil 1 Cup Mexi-Quinoa, or just plain cooked quinoa 4 Whole Eggs, or 6 egg whites 1 Pinch Salt and Pepper
Measure the quinoa.
Crack the eggs.
You can scramble eggs in the bowl or in the pan.
Heat oil in the pan.
Add quinoa and let sizzle for half a minute.
You can stir a couple of times and don't worry if some ingredients stick to the bottom of the pan.
Add eggs, salt and pepper to the pan.
Let eggs cook without stirring for half a minute.
Use a spoon to break the yolks.
Cook and mix ingredients together until eggs are cooked to desired doneness.
Use the spoon to scrape any ingredients from the bottom of the pan.

This is a great way to use up any leftover quinoa. This high protein dish makes a great breakfast or lunch. It will fill you up and give you lots of energy.
Sometimes if I am using plain quinoa I add a slice of chopped prosciutto to the pan. Prosciutto is not a bad choice if you are craving the taste of a breakfast meat. The only two ingredients in prosciutto are pork and salt.
