Quinoa Salad Stuffed Tomato
Lemon-Herb Dressing

Quinoa Salad
Makes a great side dish or salad.

Ingredients:

1/2   Cup Onion, small dice
1/2   Cup Green Pepper, small dice
1      Ear Sweet Corn, cut into kernels
2      Cloves Garlic, chopped
2      Tbs. Olive Oil

1      Cup Quinoa
2      Cups Water


1       Tbs. Pine Nuts
1       Tbs. Lemon Juice

Ingredients:

4      Large Tomatoes

1/4   Cup Fresh Basil
1/4   Cup Fresh Dill
1/4   Cup Olive Oil
2      Tbs. Lemon Juice
1      Tbs. Pine Nuts
1/8    tsp. Salt
1/8    tsp. Pepper



Bring 2 cups water to a boil.

Add quinoa and simmer, covered, for 15 minutes.

All water should be cooked out and absorbed into the quinoa.

Remove quinoa from pan and place on a large plate to cool.




Dice onion and pepper.

Cut corn from cob.

Chop garlic.



Heat a large pan on the stove.

Add oil, garlic, peppers, onion and corn.

Cook and stir for a minute or so.

Garlic and onion should just begin to brown.

Remove cooked vegetables from pan and let cool on a plate.



Measure basil and dill.

Rinse and dry.

Place herbs onto a cutting board.


Chop herbs fine.

Divide herbs into two equal portions.

One portion is for the quinoa salad.

The other portion is for the lemon-herb dressing.

Place cooked quinoa, cooked vegetables and one portion of the chopped herbs into a bowl.

Add one tablespoon of lemon juice and one tablespoon of pine nuts.

Add 1/8 teaspoon each of salt and pepper.

Mix ingredients together.

This is the quinoa salad.

You can eat it as is or stuff it into tomatoes as seen in the top photo.



Prepare tomatoes for stuffing:

Blanch and peel tomatoes as shown
here.


Cut top off of tomato.

Cut center out of tomato (a grapefruit knife works well)

Use a spoon to remove all seeds and juice.

Save all of the tomato scraps and enjoy them in a salad.

Stuff and pack as much quinoa salad as you can into each tomato.

Hold stuffed tomato in your hand.

Turn a plate upside-down over the tomato.

Press the tomato into the plate and flip it over.

Drizzle a couple tablespoons of lemon-herb dressing over the tomato.

Garnish with some pine nuts and red onion.

Lemon-Herb Dressing

1      Portion Chopped Herbs
1/4   Cup Olive Oil
2      Tbs. Lemon Juice
Pinch Salt and Pepper

Mix all ingredients together.
