Rainy Day Pea-Bean-Barley Soup

Ingredients:

1      Onion
2      Carrots
1      Stalk Celery
5      Cloves Garlic
2      Tbs. Olive Oil
1      Cup Split Peas, dry
1      Cup Lentil Beans, brown
1/2   Cup Pearl Barley
1      tsp. Thyme Leaf, dry
1      tsp. Oregano Leaf, dry
1      tsp. Rosemary, dry
1/2   tsp. Salt
1/2   tsp. Black Pepper, ground
1/2   tsp. Fennel Seed
1      Cup Frozen Lime Beans
1      Cup Chopped Tomato, canned or fresh
1      Potato, large
6      Cups Water
6      Cups Vegetable Stock


 


Wash carrot and celery.

Peel onion and garlic.



Dice onion, carrot and celery.

Rough chop the garlic.

Add vegetables to a large pot with oil.

Cook ingredients over medium heat for about ten minutes, onion and carrot will soften.




Measure barley, split peas and lentils.

Place ingredients into a strainer.




Spray with cold water for a few minutes.


Measure and place thyme, rosemary, oregano, pepper, fennel, salt and vegetable stock into a pan.

Bring stock to a boil; boil for five minutes.

Remove pan from the stove and let herbs steep in the liquid for ten minutes.



Measure lime beans.

Dice tomatoes.

Peel and dice potato.



Place peas, barley and lentils into the pot.


Add lima bean, tomato and potato to the pot.

Add water to the pot.

Mix ingredients together.

Turn heat under soup pot to high.

Bring soup to a boil.



Pour herb-vegetable stock through a strainer into the soup.

Turn heat down to a simmer.

Cover the pot and simmer the soup for one hour.

You need to remove the cover and stir the soup every ten minutes.



Soup is ready when all ingredients are cooked soft.


To Finish Soup:

Place strainer over a large bowl.

Add a few cups of soup to the strainer.

Use the back of a large spoon to rub potatoes, beans and peas through the strainer.

No need to turn ingredients into a puree, just press, smash and rub.


Use the spoon to scrape ingredients out of the strainer.

Place pressed ingredients directly into the bowl with the liquid.

Do not discard the spent ingredients.



Repeat this process until all ingredients have been pressed in the strainer.

Mix ingredients together taste for salt and pepper.

Reheat soup and serve.
