Rapini also called Broccoli Rabe
Ingredients:
1 Head Rapini 1.5 Tbs. Lemon Juice 1 Tbs. Olive Oil 1 Pinch Salt and Pepper
Slice off tough stems and discard.
Wash rapini in plenty of cold water.

Remove rapini from water and place into colander.
Mix lemon juice, oil, salt and pepper.

Place a large pan over high heat.
Add one inch of water to the pan.
Bring water to a boil.

Place rapini into the boiling water.
Cover pan and cook for three minutes.

Remove pan from the stove.
Uncover pan and place cooked rapini back into the colander.
Let drain for one minute only.
Press lightly on the rapini to get rid of most of the water.

Using kitchen tongs, transfer rapini onto a serving platter.
Drizzle rapini with lemon-oil mixture and serve.
May need a bit more salt and pepper.
