Asian Brown Rice Wrap w/ Chicken and Shiitake Mushrooms
Ingredients:
1 Cup Asian Brown Rice Salad 1 Whole Wheat Lavash, or tortilla 2 Ounces Shiitake Mushrooms 1 Tbs. Olive Oil 2 Ounces Chicken, or other lean protein 1 Pinch Salt and Pepper
Slice mushrooms thin and sauté in oil.
Sprinkle with salt and pepper.
Place one cup of rice salad over lavash.
Note: When following rice salad recipe you can substitute sauté mushrooms for the roasted if you like.
You can also use the tofu in place of the chicken if you like.
Place chicken and mushrooms over the rice.
Roll up wrap; cut in half and serve.
Asian Brown Rice Lettuce Wrap
Another fun option for the wrap recipe is to use lettuce leaves instead of lavash or tortilla.
