Ingredients:
4 Small Beets, red or yellow or both 1 Pinch Montreal Steak Seasoning, or just salt and pepper 2 tsp. Olive Oil, or just a touch of oil spray

Two small red and yellow beets.

Trim both ends off of the beets.
Scrub the beets clean.
The peel is left on in this recipe.

Light the BBQ.
Set heat on medium-high, about 400 degrees.
This recipe can also be done in the oven.
Cut beets into quarters.
Note: This recipe works best with a cast iron pan and a cast iron griddle placed on the grill.

This is the same griddle used in the Greek Chicken Recipe.
Lightly oil the cast iron pan and the beets.
Sprinkle seasoning evenly over the beets.
Place beets into the pan, skin side down.
Place pan on top of the griddle.
Close the lid; roast beets for 20 minutes.

Open lid, turn beets to the cut side down.
Close lid and roast for 10 minutes.
Open lid and turn beets to the other cut side.
Close lid and roast for 5 more minutes.
Remove beets, let rest for a few minutes.
Can be served hot or cold.
You can use the hot pan and griddle to cook other things like this pork tenderloin chimichurri.
