Oven Roasted Broccoli w/ red pepper & lemon

Ingredients:
1 Bunch Broccoli, about 1 1/2 pounds 2 Tbs. Olive Oil, divided 1 Red Bell Pepper 1 Pinch Salt and Pepper 1 Tbs. Lemon Juice

Heat Oven To 400°
Cut broccoli in half, separating stems from crowns.
Wash broccoli; no need to dry.
A little moisture will prevent over-browning in oven.

You can peel the stems if you like.
Use a vegetable peeler or small knife.
You can also leave them unpeeled

Cut stems on the bias into long, thin slices.
Slices should be about 1/3 inch thick.

Cut crowns into smaller flowerets.
Cut the red pepper into thin slices.

Place stems, flowerets and red pepper into a bowl.
Add one tablespoon oil, salt and pepper.
Mix everything together.
Place ingredients onto a sheet pan.

Place sheet pan into the oven.
Roast vegetables for 18 minutes.
Remove cooked broccoli and peppers from the tray and place onto a serving platter.
Drizzle with lemon juice and all or some of the remaining oil.
