Cooking Class: BBQ Roasted Chicken



Ingredients:

4      Pounds Chicken Breast
         Bone-In, Skin On

Pinch of Salt, Pepper, Garlic Powder

Sprinkle spices all over the chicken.



Heat bbq grill to med-high, about 425°

Place griddle or sheet pan over the grates.

Place chicken, skin side up, on the griddle.

Close lid; roast chicken for 30 minutes.


This time will vary depending on the size of the chicken breast.

Each of these breasts weigh around one pound.



Chicken is ready when it reaches 160°.

Remove from the griddle and place onto a plate.

Let chicken rest for a few minutes.

You can serve chicken whole or you can cut as seen below.

Some people like the boneless filet and others like to pick the meat off of the bones.

Be sure to discard most of the skin.

New Taste Thinking:

No need to heat-up the oven and the house if you have a grill outside. You can keep your eyes open for when chicken breast goes on sale and grab a large family pack. The roast chicken is great to have around for a few days as it is one of the best lean proteins. You can match it up with dozens of grain and vegetable recipes.
I like it with the
Mexi-Quinoa and some Chipotle Salsa.
