Oven Roasted Broccoli w/ Lemon and Pine Nuts

Ingredients:

2     Crowns Broccoli
2     Tbs. Olive Oil
2     Tbs. Lemon Juice
2     Tbs. Pine Nuts, toasted
1/8  tsp. Ground Pepper
1/8  tsp. Salt

 Cut broccoli florets from the stem.




Cut florets into smaller pieces.



Peel the outside of the broccoli stem using a vegetable peeler.

Slice stem into thin, coin-like slices.



Heat Oven To 400°

Place broccoli florets and stem into a bowl.

Add oil, salt and pepper.

Toss ingredients together
.


Place broccoli onto a sheet pan.

Roast in oven for 15 minutes.

Remove from oven and place cooked broccoli onto a serving platter.



Drizzle lemon juice over the broccoli.

Sprinkle with pine nuts and serve.

New Taste Thinking:

This is my favorite way to eat broccoli. While steamed or boiled broccoli has a brighter green color, roasted broccoli has a more intense and concentrated flavor. Don't worry if the ends of the florets get a little brown as this will give them a unique roasted flavor.
I love to pair roasted broccoli with a baked sweet potato. The colors and flavor work great together.

add some kasha with a little bit of extra oil and lemon and you have a great healthy lunch or dinner.
You can always add some lean protein if you like.
