Cooking Class: Roasting Peppers

For this recipe you can use:

2      Red Peppers
2      Yellow Peppers
2      Orange Peppers

You can roast and peel almost any variety of pepper.

The process is the same, only difference is the time it takes to roast and that depends on the size and shape.

Turn grill onto high; Close lid.

Let grill heat for about 10 minutes.

Place peppers onto the rack.

The best spot is over the flames.

Close the lid and roast for 10 minutes.

After 10 minutes, open lid & turn peppers over.

Close lid and roast for another 8 minutes.

Remove peppers from the grill.

Let peppers sit on a plate for a couple of minutes.

Cut peppers in half to stop the cooking.

Let peppers cool for a few minutes.

As soon as you can handle the peppers, pull out the stem and seeds.

You can splash the peppers with cold water if they are too hot for you but remember this will wash away some vitamins and flavor.

Gently pull away the skin.

Peppers are now ready to use as roasted peppers.

They are great in the
marinated pepper recipe.
