Note: For this recipe you will need a very large 4 quart baking dish or a half sheet pan.
Place vegetables into the baking dish and mix them together.
Keep the vegetables in the center of the dish.
Scrub beets and potato.
Trim both ends of the beets.
Cut potato in half lengthwise.
Cut each half in half again.
Cut each quarter into 3 pieces.
Place potatoes into a bowl and toss with one tablespoon of olive oil.
Cut beets in half.
Cut each half into 3 or 4 wedges.
Place beets into a bowl and toss with one tablespoon of olive oil.
Arrange the potatoes, flesh side down, along the outside of one side of the baking dish.
Arrange the beets, skin side down, around the other side.
Measure out the spice mix.
Mix and crush spice rub ingredients together.
If using fresh rosemary you can first chop it with a knife.
Trim away any excess fat and skin from the turkey.
You can leave the thin skin on the turkey as it will protect the meat as it roasts.
Sprinkle about half of the spice mix all over the turkey breast.
Sprinkle some of the spice mix over the vegetables.
You may not need all of the spice mix, I usually have a few pinches leftover.
Place the turkey, skin side up, into the center of the baking dish.
Place the dish onto the middle rack in the hot oven.
Roast turkey until it reaches 170°.
This turkey took exactly 85 minutes.
Remove turkey from oven and let it rest for 10 minutes.
The internal temperature will increase another 10 degrees as it sits.
Place turkey onto a cutting board.
Remove the vegetables from the dish and place them on a serving platter.
Removing turkey from the bone:
The breast bone is an "L" shaped bone.
Cut all the way down between the meat and the bone.
Stay as close to the bone as you can.
Once you get to the "L" turn the knife and cut / peel the meat away from the bone.
You can serve the bone as is, my favorite part, or save it for making a soup or stock.
Place the turkey filet onto the cutting board.
Slice turkey as thick or thin as you please.
Slice only what you are going to eat and save the rest for sandwiches.
Wrap the leftover piece and place in the fridge.
It will be easy to slice thin when it is cold.
Place sliced turkey onto a serving platter and sprinkle with some chopped herbs, if you like.

The first thing that you will notice about this recipe is that the smell of the turkey cooking will drive you absolutely insane. You will be so happy when the turkey is finally cooked.
As you can see, this is a full meal. You can toss it together in a few minutes and relax as it is cooking. The recipe feeds four, easily and is so simple to make. The total cost is about the same or less than a family of four would spend in a fast food restaurant.
