Heat Oven To 400°
Ingredients:
1 Head Cauliflower 2 Zucchini 10 Cherry Tomatoes 2 Tbs. Olive Oil, divided in half
Salt and Pepper

Directions:
Cut flowerets off of cauliflower.
Cut flowerets in half if they are too big.
Place cauliflower in bowl with oil, salt and pepper.
Mix cauliflower a few times to coat with oil.
Place on a sheet pan.
Cut zucchini into thick slices.
Place in bowl with cherry tomatoes.
Toss with oil, salt and pepper.
Place on pan with cauliflower.
Roast in oven for 30 minutes.
Remove and serve or chill and serve later.
