Root Vegetable Hash

Heat Oven To 425°

Ingredients:

2     Carrots
1     Parsnip
1     Onion
1     Potato
1     Turnip
2     Stalks Celery
2    Tbs. Olive Oil
1/2  tsp. Salt
1/2  tsp. Ground Pepper
1/2  tsp. Granulated Garlic, dry
1/2  tsp. Thyme, fresh or dry





Scrub, rinse and dry all vegetables.

Peel the onion only.

Cut everything into a small dice.




Gather and measure the oil and spices.


Place vegetables into a mixing bowl.

Add oil and spices.

Mix everything together.



Place vegetables onto a sheet pan.

Place pan in oven and roast vegetables for 20 minutes.

Remove pan from oven and serve.




Sprinkle with your choice of any fresh herb.

Hash also goes great with this kasha recipe.
