Marinated Pepper Wrap w/ tahini dressing

Ingredients:
4 Whole Wheat Lavash or Tortillas 4 Tbs. Tahini Dressing 1 Tomato 1 Avocado 4 Tbs. Red Onion 4 Tbs. Cilantro 1/2 Head Lettuce, iceberg or romaine 1 Recipe Marinated Peppers

Cut Tomato into a medium dice.
Slice onion thin.
Slice avocado thin.
Slice lettuce thin; Wash and spin dry.
Wash and dry cilantro.

Place lavash onto a flat board or counter top.
Add 1/2 cup marinated peppers.
Remove a couple of olives from the peppers and slice thin.
Add olives to the lavash.

Add a little lettuce and cilantro to the lavash.

Add some avocado, onion and tomato.
Drizzle with a tablespoon of tahini dressing.
Roll wrap, slice in half and serve.
Feel free to add any kind of lean protein to the wrap if you like.
