Oven Roasted Salmon
with Warm Herb Vinaigrette

Warm Herb Vinaigrette:

1    Tbs. Shallot, minced
1     tsp. Tarragon, dry
1/2  tsp. Thyme, dry
1/8  tsp. Black Pepper, ground
1/8  tsp. Salt
3     Tbs. Olive Oil

3     Tbs. Rice Vinegar, unsweetened
1     Tbs. Water

2     Tbs. Chopped Parsley, fresh





Place first 6 ingredients into a pan.

Heat oil until it starts to sizzle the shallots.

Cook and stir ingredients for half a minute.

Remove from heat and add vinegar and water.

Let vinaigrette cool while you are preparing the salmon.





Just before serving the salmon, mix in the chopped parsley.

You may also want to add a small amount of ingredients like capers, olives, diced tomatoes, green onion, almonds and so on.

Heat Oven To 400°

Ingredients:

4    Salmon Filets, 6 oz. each
1    Tbs. Olive Oil
1    Pinch Salt and Pepper


Rub oil over foil covered pan.

Place salmon on the pan.

Sprinkle with salt and pepper.

Place into oven for 16 minutes, or until cooked to desired doneness.

Remove and place on serving platter.

Cover with vinaigrette and serve.
