Farmers Market Brussels Sprouts

With Crunchy Pomegranate Seeds And Almonds

Ingredients:

1      Pound Brussels Sprouts
1      Shallot, large
2      Cloves Garlic
2      Tbs. Olive Oil
1      Pomegranate
1      Ounce Sliced Almonds, Roasted
1      Pinch Salt and Crushed Red Pepper
1      Tbs. Lemon Juice


New Taste Thinking:

The reasoning for the name "Farmers Market Brussles Sprouts" is next week I will be doing a cooking demo at the La Quinta Farmers Market. The idea is for the chef to go through the market and find ingreidnts from the different stands to create a recipe. People then watch you cook the recipe and of course they get to try the finished product. What could be more fun?


Here is a nice fresh stalk of Brussels Sprouts.

I can not resist buying stuff like this.



To remove the sprouts from the stalk just give them a twist and they will pop right off.


Use a small knife to trim off the bottom stems.


You can shred the sprouts by cutting them thin with a knife or you can do it much faster with the shredding blade in a food processor.

Shred all of the sprouts.

Peel the shallot and slice in half.

Cut each half into thin slices.

Peel and chop the garlic.


Cut pomegranate into quarters, remove the seeds.

Place oil, shallot and garlic into a large pan.

Place pan on stove and turn heat to high.

Watch as ingredients begin to heat and sizzle.

Cook and stir ingredients during this step.



Add salt and crushed pepper.

Continue cooking until shallots and garlic are golden brown.


Add shredded sprouts to the pan.

Continue to cook and stir over high heat.

The sprouts will need to soften and pick up some color.

This step will take a few minutes.



Taste a spoonful of the cooked sprouts.

They should be cooked but not overcooked.

Add more salt and pepper if needed.


Garnish with most of the pomegranate and almonds.

Add lemon Juice.

Mix ingredients a few times.

Add the remaining seeds and nuts and serve.
