Dressing Ingredients:
1/2 Ounce Ginger 1 Clove Garlic 1 Tbs. Rice Vinegar 1 Tbs. Red Vinegar 2 Tbs. Soy Sauce 2 Tbs. Peanut Butter 2 Tbs. Sesame Oil 1 Tbs. Agave Nectar or Honey 1 Tbs. Lemon Juice 1/4 tsp. Crushed Red Pepper 1/4 tsp. Salt
| Salad Ingredients:
2 Carrots 4 Green Onions 1 Red Bell Pepper 1 Serrano or Jalapeno Pepper 1/2 Cup Cilantro Leaves 1/4 Cup Peanuts, roasted, salted
8 Ounces Soba Noodles, uncooked

Peel garlic and ginger.
Mince both ingredients together.
Place into a mixing bowl.

Gather and measure all other dressing ingredients.
You can place them into small cups..........

.......or you can place them directly into the bowl with the minced garlic and ginger.
Note: The reason for the little cups is so you can check off the ingredients one last time, making sure you have them all.

Mix dressing ingredients together.
Leave dressing in the bowl for mixing the salad.

Cut carrots and red pepper into thin, matchstick size pieces.
Slice green onion thin.
Chop serrano pepper, you may not need all of it.
Wash and dry cilantro; use just the leaves for this recipe.

Follow product cooking directions.
This brand cooks perfectly when boiled 6 minutes.

Bring a pot of water to a boil.
Add noodles and cook until just tender.
You will need to stir the noodles every couple minutes.
Take a few noodles out of the water after 6 minutes and chew them to check for doneness.
Do not overcook.

Pour cooked noodles into a strainer.
Spray noodles with cold water for a few minutes to stop the cooking and cool them off.
Rinsed noodles need to sit in the strainer for 5 to 10 minutes to drain off all of the water.

Place noodles into bowl with dressing.
Toss ingredients together using your very clean fingers.
This is a good time to use the latex kitchen gloves.
Toss the salad ingredients together on thier plate or in another bowl..
Add half of the salad ingredients in with the noodles.
Toss salad ingredients together with noodle-dressing mixture and serve.
To Serve: Place about 1/6 of the soba noodle salad onto a small plate and garnish with 1/6 of the remaining salad ingredients.
