3 Pounds Trimmed Top Sirloin Steak 1 Red Bell Pepper 1 Green Bell Pepper 1 Red Onion
Marinade: 2 Tbs. Olive Oil 3 Cloves Garlic, fat ones 3 Tbs. Lemon Juice 2 Tbs. Sherry Vinegar, or red vinegar 2 tsp. Oregano, dry leaf 1 tsp. Thyme, dry leaf 1/2 tsp. Ground Black Pepper 1/2 tsp. Salt
Cut peppers and onion into large pieces.
You may not need all of the onion.
Feel free to use other vegetables such as cherry tomatoes, small mushrooms, and zucchini slices if you like.
This is a beautiful top sirloin roast that weighs about 3 1/2 pounds.
It is a nice example of a lean protein.
It was on sale and cost less than $11.
This amount of meat will feed 8 to 10 people!
Trim the meat by removing all visible fat.
You will have about 3 pounds of trimmed meat.
Discard the fat.
Cut the meat into uniform size cubes.
If they are about the same size they will need to cook about the same amount of time.
Place sirloin cubes into a bowl.
Peel and chop the garlic.
Squeeze and measure the lemon juice.
Measure the spices.
Place all marinade ingredients into a bowl.
Mix ingredients together.
Pour marinade over the meat and mix well.
Leave the meat to marinade in the bowl for a couple of hours.
Turn on BBQ grill to medium-high.
Place meat and vegetables onto long skewers.
Grill the kebabs until cooked to desired doneness.
You can turn them over every few minutes.
Save extra cooked meat to be used in other recipes during the week.

Buying a large roast like this one and cooking a huge batch of meat may seem like a poor idea at first. The reasoning behind cooking in bulk is that the leftover meat will last a number of days in the fridge. You can eat a serving of meat every-other day until it is gone.
