Ingredients:
1 Pound Skirt Steak, also works with flank steak, filet, sirloin and even chicken breast 1/2 Recipe Reasonable Pesto 1 Pinch Salt and Pepper

Trim any fat and skin off of the skirt steak.
Sprinkle with a bit of salt and pepper.
Place steak onto a sheet pan for broiling.
Note: This recipe also works great on the BBQ grill.

Sear the steak on both sides under the heat element in a very hot broiler.
The broiler must be hot and the pan needs to be very close to the heat.
Cook the steak to medium-rare, if that is how you like it.

Remove steak from the broiler.
Rub pesto all over the top of the steak.
Place back under broiler for a minute or so.

Remove pan from broiled.
Place steak onto a cutting board.
Slice and serve.
