Ingredients:
1 Pound Sirloin Steak 2 Tbs. Olive Oil 2 Cloves Garlic, minced 1 Onion. small, chopped fine
2 Roma Tomatoes 1 Serrano Pepper, or less 1 Lime 4 Tbs. Chopped Cilantro 1 tsp. Ground Cumin 1 tsp. Oregano, dry 1/2 tsp. Salt
8 Corn Tortillas 1 Avocado

Gather all of the above ingredients.
Dice onion and tomato.
Mince serrano and garlic.
Wash, dry and chop cilantro.

Trim all visible fat from the meat.
This is a choice New York steak.
You can also use top sirloin or even filet if you like.

Cut the meat into small, bite-size pieces.

Heat a large pan on the stove.
The pan must be very hot.
Add oil, meat, onion and garlic.
Let ingredients sit and sizzle in the pan, without stirring, for half a minute.

Give the ingredients a quick stir and let cook for another minute or two.

Add remaining ingredients, minus tortilla and avocado of course, to the pan.
Cook and stir ingredients for another couple of minutes.

Warm tortillas under the broiler or on a hot griddle.
Slice avocado thin.
Place steak and avocado into the warm tortilla.
Fold over and enjoy.
Can be garnished with chipotle salsa or the red onion salsa.
The meat also goes great in top of a rice bowl.
