Steel Cut Oatmeal with Flax Seed, Almonds and Fruit

Ingredients:

3.5   Cups Water
1      Cup Steel Cut Oats
3      Dates
3      Figs, dry
6      Apricots, dry
1      Pinch Salt

2      Tbs. Flax Seed
2      Tbs. Almonds, crushed, roasted
1      Banana, very ripe





Cut dried fruit into small pieces.


Place water, oats, fruit and salt into a small pot.

Bring liquid to a boil and turn down to a low simmer.

Using a wooded spoon, if you have one. cook the oats for about 20 to 25 minutes.

You need to stir the oats every couple of minutes.

Oatmeal is ready when it thickens.

Taste for doneness, it should be cooked but still a bit chewy.



When oatmeal is cooked to your liking, add the flax seed, almonds and banana to the pot.

Discard the spoon and grab a small whisk.



Use the whisk to smash up the banana and disperse it and the other ingredients into the oatmeal.

Serve a cup or more per portion and let the rest cool down.

Place leftover oatmeal into a container and put into the fridge; eat in the next few days.

Cold oatmeal can be heated in same pot with a bit more water or warmed in the microwave.


Oatmeal can also be eaten cold if you like.
