Cook steak on grill, griddle or blacken the steak in a cast iron pan.
I like this steak cooked rare, you can cook it to any temperature that you prefer.
Place romaine lettuce into a mixing bowl.
Add avocado, onion, tomato and corn.
Add all of the dressing and toss ingredients together.
Place salad on serving platter.
Slice steak and place on top of salad.
This recipe serves 2 or 3 people.
New Taste Thinking:
This simple recipe is great for a quick summertime dinner. You can replace the steak with chicken breast, tuna steak or even a grilled / blackened portobello mushroom if you like. The secret to the salad is to cut and chill the lettuce way ahead of time. Another important consideration is the use of a good salad spinner to properly dry the leaves. Too much liquid on the leaves will water down the dressing. Try a Figgy Power Bar for dessert!
