1 Apple, small dice 1 Pear, small dice 1 Cup Celery, small dice 1 Cup Strawberries, cut in 1/4 1/4 Cup Walnuts, chopped 1.5 Cups Roasted Grapes [see below]
Dressing:
2 Tbs. Almond Butter 1 Tbs. Tahini Paste or Peanut Butter 1 Tbs. Lemon Juice 1 tsp. Brown Rice Vinegar 1/4 Cup Apple Juice 1 Pinch Salt
Place all ingredients into a small bowl and mix together with a wire whisk.
Heat Oven To 350°
Place Grapes onto a sheet pan.
Roast in oven for 15 minutes.
Grapes will just begin to split open.
Remove pan from oven and let cool a bit.
Place all ingredients into a mixing bowl.
Toss together and serve.

People love the contrast of warm and cold items, especially in a salad. The roasted grapes add that dimension to this salad. They also add a concentrated sweetness that makes the salad so delicious. Try to serve the salad while they are still warm, if you can. The day I made this salad I had the great fortune to find strawberries, pears and grapes that were perfectly ripe and delicious.
You will notice that this recipe eliminates the mayonnaise from the original, legendary Waldorf Salad recipe and replaces it with a nut sauce that compliments the fruit and at the same time allows for less walnuts in the salad.
