Ingredients: 2 Sweet Potatoes 1 Jewel Sweet Potato 2 Tbs. Olive Oil Salt and pepper
Heat oven to 400°
Peel and slice sweet potatoes.
Place in a bowl with the oil.
Toss well to coat the potatoes w/ oil.
Line up on sheet pan and bake.
Bake on lowest oven rack for 18-20 minutes.
Remove from oven and let cool for a minute.
Season w/ salt and pepper and serve.
Note: Last photo demonstrates that potatoes only brown on the bottom side.
New Taste Thinking: I always keep a few sweet potatoes in the pantry. They go well with just about anything. I like this recipe because it is so simple and quick to prepare. I also recommend trying this recipe as a snack. It works well if you have just pulled something out of the oven and it is still hot. I also like to dip them in chipotle salsa.
