Swiss Oatmeal w/ Apples, Berries, Banana and Yogurt
Yields 3 portions
Ingredients:
1 1/2 Cups Oats 2 Cups Water
1 Apple, grated 3 Tbs. Raisins 6 Ounces Plain Yogurt 1 Tbs. Honey 1 Banana 3 Tbs. Blueberries 3 Tbs. Black berries or Strawberries 2 Tbs. Almonds, sliced or crushed
Place oats and water into a reusable container.
Cover and place in refrigerator overnight.
The next day strain any water from the oats.
Place oats into a clean bowl.
Grate an apple into the bowl.
Add raisins, yogurt and honey.
Mix all ingredients together.
Place one cup of mixture into a breakfast bowl.
Garnish w/ berries, nuts and banana
New Taste Thinking:
If you would like to make this a vegan dish you can omit the yogurt and honey and try soaking the oats in almond milk or apple juice. Also, this is probably the only recipe in the journal that is not my creation. This recipe was shown to me by a very old European chef back in Chicago a long time ago.
