Swiss Oatmeal w/ strawberries and almonds

Ingredients:
1 1/2 Cups Old Fashioned Rolled Oats 2 Cups Water, or half water and half apple juice 1 Pinch Salt
1 Apple, any kind 1 Banana 2 Tbs. Dried Cranberries, or raisins 1 Cup Yogurt, plain, low-fat 8 Strawberries 4 Tbs. Sliced Almonds

Rolled oats are always less expensive when purchased in bulk.
Bulk buying also saves on packaging debris.

Measure and place oats, liquid and pinch of salt into a medium size bowl.
Cover bowl and place in the fridge overnight.
If you like things a little sweeter use the apple juice.
You may need to make the recipe a few times to determine how much, if any, apple juice to use.

The next day:
Remove the cover from the bowl.
You will notice that the oats have plumped up and absorbed most of the liquid.

Place oats into a strainer.
Allow the excess liquid to strain into the bowl.
Discard the liquid in the bowl.

While oats are straining, gather remaining ingredients.
Trim and wash strawberries.

Slice apple thin and then dice the slices into very small pieces.
You can also use a hand grater to grate the apple.
Place oats back into the bowl.

Cut banana in half lengthwise.
Cut each half into thin slices.
Add apple, banana and cranberries to the oats.

Add yogurt to the bowl.
Note: For vegan version just skip the yogurt.

Mix well to blend the ingredients.
Note: You can also soak the oats in the morning and then make the oatmeal in the evening. You will then have it ready to eat when you wake up the next morning.

To serve one portion:
Place 1/4 of the oatmeal into a bowl.
Slice 2 strawberries thin.
Sprinkle the oatmeal with strawberries and a tablespoon of sliced almonds.
