Whole Grain · Whole Food · Big Flavors

Ingredients:

1      Red Pepper, sliced thin
4      Portobello Mushrooms, medium size
15   Cherry Tomatoes
1/2  Onion, sliced thin
2     Tbs. Olive Oil

5      Cloves Garlic, minced
1/4   tsp. Crushed Red Pepper
1/4   tsp. Salt

14    Ounces Firm Tofu
2      Tbs. Soy Sauce




Let tofu strain while gathering ingredients.


Optional grain choice:

2    Cups
Barley-Rice Pilaf
1/4 Cup Peas, fresh or frozen
1/4 Cup Corn, fresh or frozen

Note:
The tofu scramble is great by itself and also pairs up well with most grain dishes.



Place oil, onion and mushrooms into a hot pan.

Cook and stir over high heat for a couple of minutes.

Onions and mushrooms will start to brown.



Add red pepper, cherry tomatoes, garlic, crushed pepper and salt to pan.

Keep cooking and stirring over high heat for another couple of minutes.

All vegetables should be nice and brown before adding the tofu.





Crumble tofu and add to pan.

Drizzle soy sauce over tofu.

Cook and stir all ingredients for a minute or two.

Remove pan from heat and serve.

If serving over a grain dish, heat grains in microwave or just toss in the pan at the same time as the tofu.
