Black Bean-Bulgur Veggie Burgers

Ingredients:
6 Ounces Mushroom, white 1 Onion, small 1/2 Green Pepper 5 Cloves Garlic 2 Ounces Olive Oil
1 Tbs. Cumin Ground 1 Tbs. Chili Powder, dark 1 tsp. Oregano, dry 1 tsp. Kosher Salt 2 Chipotle Peppers 1 Tbs. Chipotle Pepper Sauce

1 1/2 Cups Bulgur Wheat 2 1/2 Cups Water 2 Cans Black Beans, 14 oz. ea. 1/2 Cup Oat Bran 2 Tbs. Lime Juice 1/4 Cup Sunflower Seeds, roasted, salted

Wipe mushrooms clean and slice thin.
Dice onion and pepper into small pieces.
Chop garlic.

Place onion, pepper, mushrooms, garlic and oil into a pan.
Place pan over medium-high heat on the stove.

Cook and stir the vegetables for a few minutes.
Onion and mushroom should turn golden brown.

Open a small can of chipotle peppers.
You will need 2 peppers and one tablespoon of the sauce from the can.

Place cooked vegetables, chipotle peppers and chipotle sauce into the bowl of a food processor.
Run the machine to chop the ingredients together.
No need to turn ingredients into puree; small pieces are fine
Place chopped vegetables back into the same pan.

Gather and measure the spices: cumin, chili powder, oregano, salt.
Place in pan with the vegetables.

Open both cans of black beans.
Rinse off and drain the beans.
Add them to the pan with the other ingredients.

Add the water to the pan and mix everything together.
Rinse off the bulgur and add it to the pan.
Mix bulgur into the liquid and place back on the heat.

Bring liquid to a boil and then turn down to a slow simmer.
Cover the pan and gently simmer the ingredients for 10 minutes.
You will need to stir the ingredients every couple of minutes.

After 10 minutes of simmering:
Add the oat bran to the pan and mix well.
Continue to cook and stir for another 10 minutes.
You can do this with or without the cover.
You will need to stir the mixture a couple of times every minute.

After 20 minutes of cooking the mixture will be very thick and most of the beans should be crushed into the grains.
Add the sunflower seeds and lime juice and mix everything together.
Remove from the heat and let cool for half an hour.
You can stir the ingredients every 10 minutes to help the cooling process.

Scoop the bulgur-black bean mixture into 4 ounce portions.
Shape the mixture into patties as you would for any hamburger.

This recipe will make 12 burgers, or 11 if you can't stop eating the delicious mixture.
You can place them into the fridge until needed or freeze as many as you like for later.
To cook the burgers you can lightly oil a pan or griddle and cook them in the pan.
The best way to cook them is outside on the bbq as you would any burger.
While the grill is hot you should cook them all as they are great the next day served cold.

Grind the ingredients together....
| |
Press and roll ingredients into 1/2 ounce or 3/4 ounce balls.
Place balls on baking sheet.
Bake in 350 degree oven for 15-20 minutes.
Serve with Mexican style dishes such as the Sweet Corn w/ Spicy Peanut Sauce
