Vegetable Chips "bet you can't eat just one"

Ingredients: 1 Red Bell Pepper 1 Green Bell Pepper 2 Carrots 1 Cucumber 1 Cup Cherry Tomatoes 1 Lemon 1/2 Daikon Radish 1 Pinch Salt
1 Recipe Ranch Dressing, optional

Wash and dry all of the vegetables.
You can peel the carrots and cucumber, optional.
You should peel the daikon radish.
Note: Daikon You can find this Japanese radish in almost all grocery stores.
It has a mild, delicious flavor; also very crunchy.

Cut peppers into large, chunky pieces.

Slice cucumber and daikon into thin circles.
Cut carrot, on the bias, into long thin pieces.
Cut tomatoes in half.
Cut lemon into wedges.

Place all ingredients, minus lemon and salt, into a bowl and mix well.
Be aware that cucumber and daikon tend to stick together.
You can add them to the bowl in the same manner as dealing cards.

To Serve:
Place a big scoop of the sliced vegetable chips into a bowl.
Sprinkle with a touch of salt and drizzle a little lemon juice over the top.
Serve with New Taste Ranch Dressing for dipping, if you like.

Keep a bag of vegetable chips in the fridge.
They will last a few days.
Eat with a sandwich instead of potato chips or enjoy as a snack.
