Whole Grain Couscous with Apricots and Garbanzo Beans

Served with Pan-Steamed Vegetables


Ingredients:

2      Cups Chicken or Vegetable Stock
5      Dried Apricots
1      Tbs. Olive Oil
1      Cup Garbanzo Beans, canned
1/2   tsp. Ground Cumin
1/2   tsp. Ground Turmeric
1/2   tsp. Ground Ginger
1/4   tsp. Ground Cinnamon
1/4   tsp. Ground Black Pepper
1/4   tsp. Crushed Red Pepper
1/4   tsp. Salt
2      Cups Whole Wheat Couscous

Garnish:
1      Tbs. Mint or Cilantro, chopped
1      Red Jalapeno Pepper, sliced thin
2      Tbs. Pistachio Nuts
1      Recipe Pan-Steamed Vegetables



Slice apricots into thin pieces.

Gather and measure first 12 ingredients.

Place first 11 ingredients into a large pan.


(that is everything up to but not including the couscous)


Bring ingredients to a boil.

Add the couscous to the pan.

Mix everything together and cover the pan.

Remove the pan from the heat and let sit for five minutes.

Remove the cover; gently mix and fluff ingredients together.



Add garnish to the pan.

Mix ingredients together a couple of times and serve.

Garnish with steamed vegetables if you wish.




New Taste Thinking:
If you are looking for a new vegetarian recipe I can recommend this one. The chunky steamed vegetables are so satisfying and the couscous is sweet-spicy and delicious. You can even make the couscous ahead of time and just warm it as the vegetables are cooking. If you don't have all of the ingredients for the couscous just make it with the ones you have. If you have never tried whole wheat couscous I think you will be pleasantly surprised.
