Grilled Vegetable and Goat Cheese Dip
served with baked
Easy Grilled Vegetables
2 Cloves Garlic
1 Cup Fresh Basil Leaves
1/4 Cup Flat leaf Parsley
10 Sun Dried Tomatoes, in oil
2 Tbs. Grated Parmesan Cheese
5 Ounces Goat Cheese
Make one recipe of easy grilled vegetables.
Eat half and put aside the other half for this recipe.
Rinse and spin dry the basil and parsley.
Place garlic into food processor.
Run the machine for a few seconds to chop the garlic fine.
Add grilled vegetables plus all other ingredients, minus the two cheeses.
Run the machine again to puree all ingredients together.
You may need to stop the machine and scrape down the sides a couple of times.
The dip is ready now for those who don't like or eat cheese.
You can add the parmesan cheese at this time and run the machine for a few seconds.
The dip is now ready for those who don't like goat cheese.
Add goat cheese and run the machine for a few seconds.
Serve dip with crackers or baked chips.
The dip also makes a great base for a wrap.
Also makes a great topping for a grilled chicken breast and can be swirled into marinara sauce and served over pasta.
