1 Green Pepper 1 Red Pepper 1 Red Onion 1 Avocado 1 Carrot 1 Tomato 1 Cucumber 1 Heart Romaine
Note: These vegetables will make 6-8 wraps.
Cut Peppers in half; Remove seeds.
Cut peppers into long, thin strips.
Peel onion; Cut into quarters.
Slice one quarter of the onion as thin as you can.
Reserve the rest of the onion for another use.
Dice tomato; Strain off excess juice.
Grate carrot on hand grater.
Peel cucumber with vegetable peeler.
Discard green peel.
Use vegetable peeler to slice cucumber into long ribbons.
Squeeze ribbons to discard excess liquid.
Place lavash onto a large work surface.
Spread the mustard evenly across the whole sheet.
Add the onion and peppers.
Add carrot, cucumber and tomato.
Cut lettuce and avocado into thin slices and place over the other ingredients.
Roll the wrap up 'jelly-roll style".
Cut and serve.
Note: A wrap is not folded like a burrito.

Anyone can take a handful of cheese and roll it up in a flour tortilla and call it lunch. Why not take a few minutes and make yourself something as delicious as this veggie wrap? Forget the flour tortilla, this lavash has no fat and is 100% whole grain.
As far as the mustard, I know that some people do not like dijon or yellow mustard. In this recipe the dijon mustard is really delicious. If this is objectionable to you try a tablespoon of hummus or guacamole or maybe even a tablespoon of mayonnaise or another salad dressing.
