Really Good Roasted Chicken

Ingredients:

1       Whole Chicken, 4 pounds
1       Lemon
2       Tbs. Olive Oil
1       tsp. Granulated Garlic Powder
1       tsp. Oregano, Dry
1       tsp. Black Pepper, coarse grind
1/2    tsp. Rosemary, fresh or dry, chopper
1/2    tsp. Kosher Salt

Heat bbq grill to medium high heat, about 400°

Mix spices together in a small bowl.

Rub lemon and lemon juice all over the chicken.

Rub olive oil all over the chicken.

Sprinkle spices all over the chicken.

Directions:

Wrap a sheet pan in foil.  Wrap 2 bricks in foil. Place 2 long skewers through the chicken.

Place skewers onto the bricks leaving the chicken suspended over the pan.

Place everything, pan, bricks and chicken on the bbq.

Close the lid and roast the chicken for about 90 minutes.

Internal temperature should reach 160°. Remove chicken and let it rest for 10 minutes.

Cut chicken and serve


New Taste Thinking:

This delicious chicken goes great with any number of grain and vegetable dishes. You can use the spice blend found in this recipe or you can use any blend of spices that you like. Spice options are ones such as Cajun, Asian, Jamaican, BBQ and so on.

If you are inclined to eat the chicken skin, try eating just a little. Pull most of the skin away from the meat and be mindful of the concept that you need not eat all of the skin to enjoy the chicken
