Wrap a sheet pan in foil. Wrap 2 bricks in foil. Place 2 long skewers through the chicken.
Place skewers onto the bricks leaving the chicken suspended over the pan.
Place everything, pan, bricks and chicken on the bbq.
Close the lid and roast the chicken for about 90 minutes.
Internal temperature should reach 160°. Remove chicken and let it rest for 10 minutes.
Cut chicken and serve

If you are inclined to eat the chicken skin, try eating just a little. Pull most of the skin away from the meat and be mindful of the concept that you need not eat all of the skin to enjoy the chicken.
