After a minute you will begin to smell the oil heating.
Next you will see the garlic starting to sizzle in the oil.
At that moment, working quickly, add all of the dressing to the pan.
As soon as the dressing hits the pan it will start to boil.
At that moment, working quickly, add all of the spinach to the pan.
Using the tongs, mix and toss the spinach in the hot pan for about 7 seconds.
Immediately remove the spinach from the pan and place onto a serving platter.
I actually use my hands to remove the spinach in one quick motion.
You may want to try this or just remove as much as you can at a time with the tongs.
Toss the spinach one last time as it sits on the serving platter and cover with all of the toppings.

I promise you that if you make this salad one time you will make it again and again and again. I can eat just about the whole thing and call it dinner, even though it can serve 3 easily. In the old days I would frizzle up some bacon in the pan and add brown sugar to the fat. I do not know what I was thinking. I guess I was just following directions.
