Chicken-Guacamole Wrap

 
Ingredients:
 
1      Whole Wheat Lavash
3      Tablespoons Cucumber Guacamole
1/2   Cup Cilantro-Lime Rice
3      Ounces Chicken Breast or Leg Meat
1/4   Cup Cilantro Leaves or Cilantro Slaw
1/4   Cup Diced Tomatoes
 
Garnish: Shredded Carrot Salad

I am a big fan of the wrap for lunch or dinner. You can eat the whole thing or just eat half, depending on what you are eating the rest of the day. You can eat half and take the other half with you for later as it is the ultimate "grab and go" food. I usually make a wrap out of things that I have on hand, like cold chicken, rice and so on. Today's wrap highlights some old favorite recipes that are buried deep in the archives.
 

 
Roast a few chicken legs.
 
They make great leftovers.
 
You can use them hot or cold.

 
Pull the meat off of the bone.
 
Discard as much skin as you can.
 
If you are using the everyday chicken breast recipe, just slice it thin.

 
Lay lavash, warm or cold, onto a cutting board.
 
Spread guacamole over the middle third.

 
Spread rice, hot or cold, over the lavash.

Place chicken over the rice.

Add cilantro or cilantro slaw.
 
Add diced tomatoes.
 
Roll the wrap and slice in half.
